Ingredients
1 1/2 - 2 lbs boneless chicken breast
1 1/2 cups fine bread crumbs
2 eggs beaten with 3 tbsp water
Marinara sauce
Salt
Pepper
1/2 cup flour
1/2 cup Parmesan chees
1/3 cup olive oil
1/4 cup chopped parsley
Grated mozzarella cheese, optional
Instructions
Place each chicken breast between two sheets of plastic wrap. Pound with meat mallet or flat side of a frying pan until 1/2 inch thick. Lightly season each breast with salt and pepper.
Dredge each breast in flour. Add chopped parsley to egg/water mixture and dip each breast into mix.
Preheat oven to 350. Heat oil in large frying pan over medium heat. Fry chicken until golden. In a large casserole dish spread a layer of marinara on the bottom. Place browned chick on top of sauce in one layer and cover with more sauce. Bake for 30 minutes. Sprinkle with mozzarella for last 5 minutes of baking.
