Flo’s Bruschetta

Ingredients

2 medium tomatoes, chopped. About 1 cup

1 tsp dried basil or oregano or 1 tbsp fresh

3 tbsp evoo

1/2 cup parmesan

pinch of black pepper

1 loaf of french bread

Instructions

Preheat oven to 425

Cut bread into 1/2 inch slices and brush both sides with oil

Place on a cookie sheet and bake for 5 minutes until bread is crisp and browned, turning once.

In a medium bowl, mix tomatoes, 1 tbsp olive oil, basil/oregano, salt and pepper.

Top each toast with 2 tbsp of the topping. Sprinkle with parmesan. Return to oven for another 2-3 minutes or until cheese starts to melt and toppings are heated through.
