The best mashed potatoes!
Ingredients
5 medium to large potatoes, peeled and boiled until soft
1 stick butter plus additional for pats on top
4-6 oz. of cream cheese
2/3 to ¾ cup of sour cream
½ cup shredded cheddar cheese
¼ to ½ cup of milk (I use half and half)
Salt, pepper, parsley, chives, paprika
Instructions
Boil the potatoes until soft, drain water.
Put butter, cream cheese, and sour cream into whatever container you will be mashing in then put hot potatoes over top while they are still hot (melts everything). Mash and add milk/half and half until desired consistency (a little thin is okay as it bakes uncovered).
Add cheddar cheese and mix in. Salt, pepper, parsley and chives if you wish.
These can be made up to 2 days ahead of time and refrigerated. I put about 4 healthy pats of butter on top and sprinkle paprika. Bake in the oven at 350 for 30-40 minutes uncovered.
