Mediterranean Couscous
Ingredients
- Couscous
- Low sodium chicken broth
- Cucumbers
- Kalamata olives
- Celery
- White onion
- Cherry tomatoes
- Sweet bell peppers
- Scallions
- Cilantro
- Feta
- Toasted pine nuts
- Pistachio
- Cranberries
- Olive oil and vinegar
Instructions
- Cook couscous in a rice cooker or in a pot on the stove with chicken stock.
- Finely chop all ingredients and add to a large mixing bowl with the couscous once it's cooled.
- Drizzle olive oil to coat while tossing and add vinegar in little by little while tasting. Salt and pepper to taste as well.
