Mediterranean Couscous

Ingredients

Couscous

Low sodium chicken broth

Cucumbers

Kalamata olives

Celery

White onion

Cherry tomatoes

Sweet bell peppers

Scallions

Cilantro

Feta

Toasted pine nuts

Pistachio

Cranberries

Olive oil and vinegar

Instructions

Cook couscous in a rice cooker or in a pot on the stove with chicken stock.

Finely chop all ingredients and add to a large mixing bowl with the couscous once it's cooled.

Drizzle olive oil to coat while tossing and add vinegar in little by little while tasting. Salt and pepper to taste as well.
